Uppskrift: Whole Wheat Buns


Buns for 5 people Preparation 1 hour 30 min. / Cooking 15 min. / Total 1 hour 45 min.
ingredients (about 10 pieces)
- 50 g of yeast
- 5 dl of lukewarm water
- 65 g of oatmeal
- 2 tablespoons sour milk product. eg. yogurt or skyr
- 200 g whole wheat flour
- 100 g white wheat flour
- 100 g spelled flour
- 2 teaspoons salt
- 2 tablespoons honey
- 80 g mixed grains (eg pumpkin seeds and sunflower seeds)

 

Dissolve the yeast in the lukewarm water in a mixing bowl for the kitchen appliance. Add oatmeal and sour milk product and stir it around. Mix the flour together and add it to the bowl with salt and honey. Stir the dough with a spoon into a sticky dough. The dough should not be kneaded at this stage, it should look like oatmeal. Let the dough rest for 15 minutes. Run the dough at the highest speed with the hook for approx. 10 minutes until the dough is glossy and uniform. Add half of the seeds and replace the flat hook with the dough hook of the machine and run the dough again until it releases the bottom and "crawls up the hook". The dough should be completely glossy, supple, wet and elastic (it doesn't look like a classic bun dough). Pour the dough into a bowl or container lubricated with olive oil. Cover the bowl with household film and a towel and allow the dough to rise for 1 hour at room temperature. Ca. 30 minutes before the dough has finished, turn on the oven at 250 C hot air with a baking tray inside. Carefully pour the dough onto a floured table. Divide the dough into equal pieces with a knife or spatula (without working too much with the dough) and place the buns on a piece of baking parchment which is pulled onto the hot baking sheet. Sprinkle the remaining kernels on the buns. Bake the buns in the center of the oven for approx. 15-18 minutes. They should be crispy and hollow when you knock on them. Allow the buns to cool on a grill and serve them.
